Wagyu is a Japanese breed of cattle which was imported into Australia in the early 1990s.
It is known for producing highly marbled beef which contains high levels of monounsaturated (i.e. healthy) fats. This is not only responsible for Wagyu's health benefits, but also for its incredible tenderness and taste.
In the mid 1990s, Dr. Bill Burns BVSc (founder of Shadai Wagyu) sourced recently imported Wagyu genetics from David Blackmore (Blackmore Wagyu) and Simon Coates (Sumo Wagyu) and soon thereafter David and Bill worked together performing embryo transfers in what was to become one of the first herds of fullblood Wagyu in Australia.
Bill has used his extensive knowledge of breeding and pedigrees in working with Australian industry leader David Blackmore and in consultation with legendary Japanese Wagyu Master Mr. Shogo Takeda to develop the herd into a high quality 100% fullblood Wagyu herd through careful selection of bloodlines using embryo transfer and artificial insemination, utilising the best and most suitable genetics.
Bill and David collaborated on feeding trials in order to experiment on the outcomes of various feed rations for Wagyu. Bill's experience in the manufacturing of equine feed additives served a pivotal role in determining the optimal feed ration which induces the highest possible marbling. This resulted in an extended period during which 98% of Shadai Wagyu carcasses achieved a marbling score at the highest levels of 9 or 9+.
Shadai Wagyu exclusively produce 100% fullblood Wagyu with a focus on seedstock production where each animal is registered with the Australian Wagyu Association. Therefore each individual's genetic history can be traced through pedigree information which also links to carcass data results maintained by Shadai Wagyu for over 20 years.
